Warm Barley Salad

Warm Barley Salad, with roasted peppers & grilled halloumi ……flirting with the flavors of the Mediterranean.

Recipe

Ingredients –

  • 1 cup of boiled pearl barley grains
  • Mixed peppers – red , green , yellow
  • Fresh halloumi (or fresh cottage cheese / paneer can be used)
  • 1/2 cup Pomegranate seeds
  • Fresh dill
  • 1 tbsp of dry mixed herbs
  • salt & pepper for seasoning
  • olive oil

Directions –

  • Wash , deseed and cut the peppers in half
  • On a grill – place the slices of peppers, drizzle olive oil on them – Grill till they are tender.
  • Rest them and cut them long strips
  • Cut the halloumi in halves and gently rub it with olive oil & season it.
  • Rest them and cut them long strips
  • Place it on the grill and grill it it has the beautiful grill marks
  • In a salad bowl – add the boiled pearl barley grains, grilled peppers, halloumi,┬áPomegranate seeds,┬ádry mixed herbs , olive oil , fresh dill and seasoning.
  • Give them a good toss
  • Serve !
