Vegetarian Goi Cuon (Vienamese Rice Paper Rolls)

Deliciously healthy , and fresh vegetarian version of the traditional Vietnamese salad rolls called Goi Cuon. These are served cold.

Recipe

Ingredients –

  • Thin strips / juliennes of rar carrots, beet roots, cucumber (deseeded) , green peppers
  • a few sprigs of mint
  • Boiled rice noodles /vermicelli
  • spring onion
  • 1 pack rice paper (banh trang)
  • 1½ tsp salt
  • 1 tsp sugar
  • Chilli Sauce
  • Hoisin Sauce  ( lightly diluted with water)
  • White vinegar
  • minced garlic
  • chopped garlic
  • Crushed peanuts & red chillie flakes

Direction –

  • Wash , dry and cut the veggies into juliennes
  • Keep warm water ready in a slightly deep plate
  • Take the rice paper and soak it in the plate with warm water for a 30 secs-45 secs
  • Place it on a flat/ dry surface
  • Place some of each of the cut veggies
  • Roll it carefully and cut it in half
  • For the dip – mix 2-3 tbsp on chill sauce , hoisin sauce with water , sugar, 1 tsp vinegar, garlic, ginger, black pepper and red chilli flakes. Garnish it with crushed peanuts
  • Dip the rolls in the sauce and enjoy!!
